Teriyaki Sesame Pork Stir-Fry

Ingredients
- 2 pounds pork tenderloin cutlets, tenderized
- 1 bottle teriyaki marinade
- 2-3 cloves garlic, minced
- 1 red onion, sliced
- 2 medium-sized carrots, shredded
- Zucchini and/or squash noodles
- 2 peppers, sliced (They can be red bell peppers, yellow bell peppers or shishito peppers).
- Yaki-Soba noodles (They can be found in the refrigerated section near Produce in grocery stores).
- 1 (10-ounce) bag spinach
- Salt and pepper, to taste
- Sesame seeds, to garnish
- Extra virgin olive oil, for griddle
Directions
- Tenderize the pork cutlets with a mallet. Place in a large bowl or Ziplock bag and marinade in the teriyaki marinade for up to 24 hours.
- Turn Blackstone griddle to high heat. Once hot, drizzle olive oil onto the griddle top. Add minced garlic, stir, and let simmer with oil for about 30 seconds (don't let the garlic burn!).
- Add pork to the hot griddle top. Continue stirring meat around while it cooks.
- Toss the red onions, carrots, zucchini and squash noodles in with the pork.
- Mix in the Yaki-Soba noodles then add spinach when the vegetables are tender and the noodles heated through.
- Season the stir-fry to taste with salt and pepper then stir with spatulas.
- Plate it up, top with a sprinkle of sesame seeds and enjoy!
