Utah Burger

Directions

1. Preheat your Blackstone to medium-high heat and lightly oil the cooking surface.

2. Toast the burger buns until lightly golden, then set them aside.

3. Divide the minced beef into 4 equal portions. Season each with salt, place them onto the hot griddle, and smash into thin patties.

4. Cook until a deep crust forms on the bottom, then flip and top each patty with two slices of cheese. Continue cooking until the cheese is fully melted.

5. Place the pastrami on a medium-heat section of the griddle and warm it through until hot and lightly steaming. If possible, keep it on a warming rack or cooler section so it stays warm without overcooking.

6. In a small bowl, mix the mayonnaise and ketchup together to make the classic Utah fry sauce.

7. Spread the fry sauce generously onto both the top and bottom halves of each toasted bun.

8. Build the burgers by placing a cheeseburger patty onto the bottom bun, topping it with a generous pile of warm pastrami, then finishing with the top bun.

9. Serve immediately while the burger is hot, the cheese is melted, and the pastrami is steaming.
