1 lb. breakfast sausage
Start by making approximately 2-3 oz balls from the breakfast sausage. Place them on a pre-warmed griddle set to medium heat.
Take each tortilla and press it firmly onto each sausage ball for about 7-10 seconds. Cook for 2 minutes, then flip and cook for another 2 minutes. Remove the sausage and tortillas from the griddle.
On the griddle, create small circles of cheese. Once the edges are set and firm, place the sausage and tortilla on top of the cheese "skirt." Use a spatula to lift the entire assembly from the griddle and transfer it to a cutting board or plate.
Add a pat of butter to the griddle and let it melt. Crack the eggs and cook them to your desired doneness. Place the eggs on each tortilla.
Finish by adding some Herdez Salsa Verde or Roja for extra flavor. Enjoy your delicious breakfast tacos!
