Olive oil, for the griddle

1 crown of broccoli

1 lb of carrots, peeled and shredded

12oz raw shrimp

2 packets chicken-flavored ramen noodles, noodles cooked and seasoning packets set aside

4-5 green onions, sliced, separate the white base from the green tops

6 eggs

1 lime, cut into wedges

1 8oz jar pad thai sauce

¼ cup crushed peanuts

Salt and pepper, to taste

Directions

Preheat Blackstone griddle to medium heat. Drizzle olive oil then add the broccoli, shredded carrots, and green onion bottoms. Season with salt and pepper, cook for 4-5 minutes.

Add shrimp and season with chicken ramen packets. Cook for 2-3 minutes until almost cooked through. Crack eggs over vegetable mix then scramble with spatulas.

Pour the noodles over the stir-fried vegetables and shrimp. Mix with spatulas then add pad thai sauce. Mix with spatulas for 2-3 minutes until the sauce is slightly reduced and coats all the noodles vegetables and shrimp.

Remove from the griddle, top with crushed peanuts and green onions. Serve with lime wedges.
