In a small saucepan over low heat, add the marshmallow cream, heavy whipping cream, and vanilla.
Whisk until the mixture is smooth and thinned out. Remove from heat and set aside.
Heat a griddle to medium/medium-low heat.
In a medium bowl, combine the pancake mix, hot chocolate mix, cocoa powder, and club soda. Mix until smooth and let the batter sit for 5 minutes.
Melt some butter on the preheated griddle.
Using an ice cream scoop or ladle, pour the batter onto the griddle. Once the edges look bubbly, flip the pancakes and cook for an additional 1–2 minutes.
Top with marshmallow syrup, crushed candy canes, whipped cream, mini chocolate morsels, or any of your favorite hot chocolate toppings.
