While the griddle preheats to medium low heat, mix together the mayo and old bay in a small mixing bowl and set aside
Swirl butter onto the griddle and add the lobster meat to reheat in the butter. Meanwhile swirl more butter for each croissant to go down into.
While the croissants toast spread some old bay mayo onto one half, add shredded cheese followed by a pile of lobster meat and more cheese.
Sandwich the top on and then continue to toast each side until crispy and golden brown adding more garlic herb butter on the outside of the croissants if desired and enjoy!
