How to Bake on a Blackstone

Learning how to bake on a Blackstone Griddle is super easy to do when you learn a few easy tricks and tips.  So many people have asked, “Why would you ever want to bake on a Blackstone Griddle?”  If you are an outdoor camper or if your power has gone out, then the only thing that you might have to cook on is a flat top griddle.  Maybe you are like me, where I hate running the oven in the summertime when the house is hard to keep cool.  My family always likes a sweet treat after a dinner meal, so it’s super easy to whip up a dessert and bake it on the Blackstone Griddle along with the rest of your meal.  And I can teach you how!!

Can you Bake on a Blackstone Griddle?

From Michigan to the Table

I get this question all the time!  It's possible to “bake” everything with a griddle! Making cinnamon rolls, brownies, and even cookies on your flat top griddle.  You will have to make a few modifications to how you prepare your normal baked recipe, but you should be able to get the same results as you normally would. 

Tools Needed When Baking on a Blackstone Griddle?

  • Parchment Paper – Use parchment paper if you want to eliminate that griddle smokey flavor when baking!!  
  • Dome Lids – I bought my large dome lid from Etsy.
  • Baking Rack
  • Scoopers – have a variety of different sizes 
  • Cupcake Pan – With cupcake wrappers
  • Small Cake Pans – A 4 or 6-inch round pan is best but an 8 or 9-inch round pan will also work if only filled no more than 1/3 fill of batter.  
  • Ramekins 
  • Foil
  • A Foil or Metal Pan – For deep frying
  • Griddle Spatula
  • Baking Stone
  • Toothpicks
  • Packaged Mix – Cake mix, cookie mix, muffin mix, etc.….

Learn how to Bake on a Blackstone

I am going to share a few tricks that I learned when trying to bake on the Blackstone Griddle.  These tricks can possibly be used in several different recipes so learning the basics is very important.  Check out my YouTube video on the 10 Secrets for Baking on the Blackstone Griddle.

  1. Parchment paper is very important because it creates a little barrier between the item that you are baking and the flat top griddle. Helps with burning on the bottom of your item.  It also helps to protect what you are baking from a smoky griddle.  One thing that I found out while testing baked items such as cupcakes was that they had a smoky taste which I didn’t want.  The griddle was burning off some of the oil creating a smoke that was being trapped under a dome lid used to create an “oven” around the item you were baking. Just place a sheet of parchment paper completely onto the griddle so that when the dome lid is being used, the paper is sticking out around the lid.
  2. The dome lid is used to work like an oven around what you are baking. The lid will trap the heat in and around the baked item.  When using a cupcake pan for 12 cupcakes, you will have to use a large rectangle dome lid.  If you don’t have a dome lid, try using a large disposable foil pan.  Remember that just like an oven the more that you peek at what you are baking, the more heat will be lost, and it will take longer to cook.
  3. A baking rack – is used to lift your items off the hot griddle so that it does not burn on the bottom. While testing things like a small cake that takes longer to bake, it is best to raise the pan off the griddle and let the heat from the dome lid trapped around the pan cook the cake. 
  4. Sheets of foil – If you don’t have a baking rack, you can use a couple sheets of foil. Take a sheet of foil and loosely crumple a long strip, repeat, and take the two strips and lay them so that they create an x on the Blackstone Griddle.  Place the item that you are baking on top of the foil pieces and make sure it’s level.  If needed, use more crumpled foil strips to help lift off the griddle. 
  5. Griddle Temperature – When baking you want the griddle to be on the lowest setting. Anything higher will burn the bottoms of the items that you are cooking.  Remember, low and slow when baking on the Blackstone Griddle.
  6. Baking Pans – Remember that small is better. Use muffin pans, small cake pans, or even mini muffin pans work best.
  7. Wind Guards – Don’t use them when baking! You do not want the griddle to get too hot while you are baking your items. 
  8. Toothpicks – Use a toothpick to test your cupcakes, cakes, or muffins to check for doneness. If the toothpick is wet or has crumbs attached to it after it has been inserted into the center, then it needs to be baked longer.  Make sure your toothpick comes out clean before removing from the griddle.
  9. Prepackaged Mixes – If you don’t want to make your recipes from scratch, it’s okay to use prepackaged mixes such as cake mix or muffin mix. Even the tubes of biscuits work great for making things like monkey bread
  10. Use a Metal, Cast Iron, or Foil Pan – To place on the flat top griddle and fill with oil for deep frying your bakery style donuts such as a griddle apple fritter.
  11. Baking Stone – If you are used to using a baking stone in your oven then you might want to give it a try on top of the Blackstone Griddle. It works great!  Just make sure to preheat the stone just like you would in the oven.
  12. Oven Mitts – Just like an oven, the pans get very hot! Make sure to use oven mitts to protect your hands from getting burned. 

How Long do I Bake my Item on the Blackstone Griddle?

Baking time is going to vary greatly depending on what you are making.  I have found that some items will take less time to bake on the Blackstone Griddle while other items will take longer to bake.  Make sure when you are opening the dome lid that you just peek quickly to check on the baking item.  If you have to remove the dome lid, place it flat onto the griddle so that the heat stays in the dome lid and does not escape out, dropping the “oven” temperature. 

Air Fryer Baking

Learning to bake in your Blackstone Air Fryer can be tricky but very fun to do.  You have to work in a small space, the air moving around the container can cause some issues and trying to figure out how to set the temperature and time for the item you are cooking are all things to consider when baking with your air fryer.  To get you started, try these recipes: S’mores mini pies, Griddle Girl Air Fryer Cinnamon Apple Pie Cups, and Griddle Girl Air Fryer Apple Fries.
